- Preheat an oven to 180C/350F. Shift the flour, baking powder and pudding powder (of milk powder if used).
- Beat the butter and brown sugar until creamy and fluffy. Add in eggs, one by one. Beat well after each addition. Beat in vanilla extract.
- Sift the flour mixture into the butter. Then add the cornflakes and mixed candied fruit and mix well.
- Using a teaspoon, scoop a small amount into small paper cups. Bake in the preheated oven for about 18 minutes until golden brown. Leave to cool completely on wire racks.
